Gazpacho

Sunny weather calls for something light and refreshing... gazpacho! If you're enjoying a lazy summer day and you don't want to stay closed in the kitchen to prepare your lunch or dinner, you can be sure this lovely dish will be ready in no-time. Just put everything in your food-processor and it's ready to serve! Also a perfect idea as a tasty course when you're having friends over. As I often mention the quality of the products is of big importance if you want the result to be rich of taste. This gazpacho won't impress anyone if the vegetables are not good (the tomatoes should be sweet!) or if you use cheap olive oil. Ingredients, serves 2-3 - 400g ripe tomatoes - 1 cucumber, peeled en cut into big chunks - a very small onion, cut in half - 1 red bell pepper, deseeded and cut into big pieces - 2 slices of white bread (I used the bread my father makes, you can see it in the picture above) - 6-8 tablespoons extra vergine olive oil - 2-3 tablespoons white wine vinegar - 1 big garlic clove, crushed - salt and black pepper to taste Put all the ingredients in a food processor or blender and process until you have a smooth consistency. If you use a blender make sure you don't add the garlic until after you pour the soup in a bowl, because the flavour of the garlic may affect the rubber seal of your blender. Taste and adjust the seasoning. You can eat it immediately or put it in the fridge until ready to serve. Enjoy!
